This blue cheese is traditionally produced in the Queyras massif by a cooperative of local farmers. The milk comes from around thirty villages surrounding Rochebrune, and the cheese is aged in the cellars of the old town. Slightly crumbly in texture, it is a distinctive cheese with subtle spicy notes.
