Cheese from Burgundy made from cow’s milk, triple cream, smooth and luscious. It is crafted with whole milk enriched with double cream. This is the only Brillat-Savarin made with thermized milk — gently heated to preserve as much of the raw milk’s character as possible. This process gives it aromas of cream, hazelnut, forest floor, and mushroom in its aged version. The cheese is entirely handmade.
