Cancoillotte is a melted cheese specialty from the Franche-Comté region. Made from melted metton mixed with a little water or milk, it is smooth, light, and very low in fat. Its mild flavor, slightly milky or garlicky depending on the variety, makes it a staple of Franche-Comté’s culinary heritage.
