Our Chaource is handcrafted in a family-run dairy in the Meuse region. Its paste, dry-salted by hand, is creamy, supple, yet fairly firm. It is characterized by centripetal ripening, which gradually reveals a contrast between its creamy outer layer and the fine, slightly grainy texture of the core. It gives off a delicate mushroom aroma and may develop subtle fruity notes — including hazelnut — along with a light taste of fresh mushrooms.
