This cheese is produced in Vichy, in the Auvergne region. It is made using a Coulommiers base. During draining, the curd is encircled with a strip of spruce bark to hold the paste together. The draining is traditionally done by pressing in a vat. The cheese is then washed with salted water and aged on spruce boards in a cellar for one month. The spruce bark allows the cheese to develop its natural rind and gives it a unique, subtle woody flavor.
