Beskrivning
Soft cheese made from the raw milk of a single flock of sheep. The curd, set with rennet, is encircled with a band of spruce wood, whose tannins lend it a woody, aromatic flavor. The cheese is aged in a humid cellar, where it is regularly washed with salted water during maturation.
