This cheese from Burgundy is the cousin of Brillat-Savarin, as it is made by the same producer using the same double-cream base. It is coated with mustard bran seeds after molding, giving it a gently spiced flavor (not hot) that pairs beautifully with the tanginess of the paste and enhances its delicate hazelnut notes.
