Regularly washed with marc de Bourgogne and salted water during its maturation in a humid cellar, this delicious, melt-in-the-mouth Burgundian specialty develops a beautiful orange hue from the natural pigmentation of its cultures. This cheese should be eaten with a spoon — the only way to ensure perfect ripeness, as if it’s too firm, it may taste sharp. Our Époisses comes from one of the last farmhouse producers still making it in the traditional way.
