This raw sheep’s milk cheese is the same size as a Tête de Moine. Espelette pepper is incorporated directly into the curd, combining the distinctive character of sheep’s milk with the subtlety of the pepper. An original cheese to enjoy sliced or shaved into delicate “flowers.”
