This cheese is probably the mildest of all blue-veined varieties. Its production is entirely handmade — from cutting and stirring to molding. The aging process lasts at least 40 days, during which the cheese is pierced to encourage the growth of the blue mold. The paste is firm, and its flavors are delicate and well-balanced.
