This is Swiss Gruyère — and contrary to popular belief, it has no holes! It is produced in the cantons of Fribourg, Neuchâtel, and Vaud. Like Comté, its color ranges from pale yellow in winter to a deeper golden hue in summer. As with most alpine cheeses, the exceptional quality of the mountain pastures gives the milk — and thus the cheese — remarkable aromatic complexity. While remaining mild, it offers a broad flavor palette with fruity, roasted, floral, vegetal, and milky notes.
