This uniquely shaped cheese is rubbed with paprika, olive oil, and grape marc during the aging process. After four weeks in the cellar, its rind takes on a slightly reddish hue, the paste becomes smooth and supple, and its goaty flavor deepens. It is produced on a family farm located in the Jabron Valley in Haute-Provence.
