The village of Gorgonzola lies between Milan and Como, where the cheese has been produced since the 10th century — earning the nickname “the emerald of cheeses.” However, the cheese itself was never actually made in the village! Shepherds would stop there on their way down from the mountains, and the locals, overwhelmed with cheese, began calling it Gorgonzola. Its hard, rough rind encases a rich paste with mildly tangy, spicy flavors.
