This cheese is traditionally made during the Estive — the summer grazing season — in shepherds’ huts high in the mountains. The sheep, either black- or red-headed Manech, are a traditional Basque breed known for their hardiness and the exceptional quality of their milk. The result is a distinctive cheese with a long, lingering finish.
