A single wheel of Parmesan requires 500 liters of milk and can age for many years — some wheels aged over four years are even traded on the Milan stock exchange. When properly opened and cut, fine, long striations radiate from the center toward the rind. This cheese is best enjoyed in small shards, allowing its full aromatic complexity to unfold. Its texture is slightly grainy and crystalline, offering a delicate fragrance. Our Parmesan is aged for a minimum of 30 months.
