Beskrivning
This cheese from the Monts du Forez takes its name from a lake in Auvergne located in the crater of an ancient volcano. It is aged in rocky caves inside the extinct volcanic lake. The result is a cheese with a slightly nutty flavor, somewhere between Reblochon and Saint-Nectaire. Its red color comes from regular washings with annatto.
