The most famous of all blue cheeses — and one of the few made from sheep’s milk. To preserve its delicate texture, Roquefort should be kept cool and always protected from exposure to air. For the best experience of its aromas and flavors, it is recommended to bring the cheese to room temperature at least one hour before serving.
