Beskrivning
This sheep’s milk cheese is an emblem of the Basque region. Its paste is very creamy, even runny toward the end of aging. The flavor is mild and delicate, becoming more distinctive as it matures. Its velvety rind results from a mixed aging technique combining both bloomy and washed-rind methods.
