Shropshire Blue is a cheese from England, easily recognized by its striking color. In fact, it is essentially a Stilton, with the addition of annatto (a natural coloring from South America). The production methods are the same: the curd is ladled into a setting vat for inoculation and renneting, then transferred to a draining vat where it acidifies overnight. The texture of Shropshire Blue is rich and buttery, and its flavor is typical of Stilton — full-bodied and creamy.
