Less salty than Roquefort and less creamy than Gorgonzola, this cheese is at its best when made from summer milk. Since the Victorian era, it has traditionally been enjoyed with sweet or dessert wines, especially during the holiday season. In our shops and restaurant, we offer a special Port-infused version, where the cheese is blended with red Port to create a smooth, creamy texture.
