This uniquely shaped cheese is small for its family. It should not be cut but rather scraped into thin rosettes, called flowers, using a Girolle. This technique alters the texture of the paste, making it wonderfully melt-in-the-mouth. Its golden, slightly moist rind is the result of regular damp brushing in the cellar over a three-month aging period.
