A raw-milk cheese from the pastures of the Haut-Doubs, produced at over 700 meters in altitude. Its production is only permitted from August 15 to March 15, when the cows are carrying their calves and no longer produce enough milk for Comté. The result is a delicious cheese with a velvety rind, wrapped in a spruce band. While Mont d’Or baked in the oven with Jura white wine is delightful served with potatoes, it is also very tasty when enjoyed cold and sliced.
